Ingredients
1 lb Chicken (cut into bite size pieces)
1 Yellow onion
1 Bell pepper
8 oz Hatch green chilis
Playhouse Spices Weeks Bay Seasoning
1 can yellow & white corn
3 or 4 cloves Garlic
2 cans Great northern beans
1 can Cannellini beans
4 oz Cream cheese (softened)
1 to 2 tablespoons of Masa Flour (depending on thickness desired)
Salt & pepper to taste
Instructions
Heat a large pot over medium heat. Once hot, add a drizzle of olive oil and chicken. Season with a dash of salt & pepper and heavy sprinkle of Playhouse Spices Weeks Bay Seasoning.
Cook until chicken is golden brown, then add peppers & onions. Cook until translucent and soft. Add garlic & cook until fragrant.
Season liberally with Playhouse Spices Weeks Bay Seasoning. Add masa flour, hatch green chilis and 3 cups of water. Cover and simmer for about 15 minutes, stirring occasionally.
Drain and rinse the corn & beans.
Add the cream cheese to the pot and stir until combined.
Add the corn & beans. Cook for another 15 - 20 minutes.
Serve with shredded cheese, tortilla strips, avocado, a dollop of sour cream & hot sauce if desired.
